How to cook it
In a medium sized bowl add the potatoes , feta , egg, onion , dill , pepper , lemon juice and lemon zest , and mix well . Cover and keep in the fridge for 1 0 2 hours, until the mixture has congealed . Packed by hand into balls the size of a golf ball. Then dredge in flour and flatten slightly . Heat up some oil in a pan. Cook pancakes for more time until they are golden brown on both sides . Let them drain on paper towels and serve immediately. Garnish with a handful of dill and lemon wedges.
