Hot to cook it

In a saucepan, put salted water to boil , then cook the potatoes in their skins . Once cooked , peel and mash with a potato masher in a bowl. Add the mashed potatoes parsley, salt. Then chop the bacon and add it to the mixture then add the eggs and grated Parmesan .

Mix all ingredients well and then picked by hand any part of the compound (about 50 grams) and mold it to form nuggets . Then move the croquettes in the beaten egg , then in bread crumbs and then fry them in hot oil and let them brown well turning them from side to side .

Drain on a paper towel and serve hot .
